Manufactured
with our hands

All products that are created at Kalyvitis are manufactured by us in a traditional way. In addition to olive oil, we make goat cheeses, wine, honey, bread and we have eggs from our chickens. We are now also focusing on eating from our vegetable garden all year round. With your hands in the soil and seeing how your food is made, remains something special to us. Going back to basics is actually also learning to see, hear, smell and taste again.

Goat cheeses

We have a few stubborn goats at Kalyvitis with whose milk we make our unique goat cheeses. Each goat produces between 2 and 3 liters of milk per day. To make one cheese, we need about one liter of milk. The cheeses are small but full of flavor.

Fresh organic eggs

Although they have a great time together, our chickens love a little attention. Especially for vegetable waste, they come rushing to the fence. However, some of them know no boundaries and walk everywhere between the olive trees.

Thyme honey

The bees of Kalyvitis make thyme honey. This honey is made in the spring/summer when the thyme is in full bloom. We place our beehives around that time in places in the mountains where there is a lot of thyme.​

Red wine

In September we harvest our grapes in the mountains above the village of Orino. These vineyards are not sprayed and partly irrigated. They have four types of grapes, Liatiko, Kotsifali, Syrah and Agiorgitiko.

EXTRA VIRGIN OLIVE OIL

In the month of November we start 'picking' the olives in our olive groves. Harvesting takes about two months on average. We mainly do the work by ourselves, but every now and then we get a helping hand from family and friends. ​​
